I’ve seen it all. Real housewives lay a dead pork on their countertops, chef Ramsey throws food in the trash because it’s undercooked (raw), and food handlers not washing their hands after touching money and/or trashcans. But after watching Sunday’s episode of “Undercover Boss” I still have faith that some people actually get it.
A Baja Fresh manager actually makes the company’s CEO, who is working as an undercover employee, throw his gloves away, wash his hands, and put on new gloves after he “inadvertently” scratches his goatee.
Another store in Arizona, using a digital thermometer, checks all their food temperatures before prepping up for the day, making sure each tray on the “cold table” is at or bellow 40 ºF. When one of the tray’s temp. was above 40 ºF, the CEO made a phone call to have that issue fixed right away. With a food porn culture, it’s nice to see cross-contamination can be prevented by practicing good hygiene, and keeping foods at a safe temperature to prevent microorganism proliferation – cold foods at or below 41 ºF and warm foods at or above 135 ºF.
