Dirty doggie dining in Manhattan, Kansas

When I first opened the Kansas State Collegian yesterday morning, the following headline popped out: “Green, pet-friendly bar opens in Aggieville.” The story started:

“Tail wagging, mouth drooling, riled up with excitement stands Tank the dog, welcoming bar patrons this Saturday to the newly renovated the Loft Bar and Grill.”

 

The owner added,

 

“We will be having many different types of animals outside the Loft — dogs, goats and even miniature Clydesdales.” Jacobson said. “Our bar is very pet-friendly.”

 

Actually, the Kansas Food Code prohibits animals on food establishments, unless they are assistance animals, according to code reference 6-501.115 found here.

 

Did Jackson read over the Food Code before opening his restaurant? Maybe he’s a rebel, or is he just playing it dumb?

 

The local health department inspectors would consider bringing pets to a restaurant a critical violation. Last year, Tanks Tavern, also in Aggieville, was cited two critical violations including: “live dog in bar and dog food stored under sink.”

 

As Amy and Doug wrote, “tripping, biting, dog fights, barking, allergies, and the transfer of dangerous microorganisms such as E. coli, salmonella and cryptosporidium” are some of the risks that come along with doggie dining.

 

Restaurants in Florida can apply for permits to allow dogs on their patio, if they meet certain conditions. Employees must not touch pets while handling food, and if they do, they must wash their hands. Customers should also wash their hands before eating and keep their pets off tables, chairs, and tables.

 

As far as I know, we are still in Kansas, where doggie dining is clearly prohibited.

Telling students to wash their hands isn’t enough: new research identifies barriers to handwashing compliance in a university residence

Food safety researcher and talk-show host Jon Stewart got it right back in 2002 when he said,

“If you think the 10 commandments being posted in a school is going to change behavior of children, then you think “Employees Must Wash Hands” is keeping the piss out of your happy meals. It’s not.”

Instead, getting college students to wash hands, halt disease, requires giving them proper tools and spreading the word in ways that get attention: the path to poor hand sanitation is paved with good intentions, according to researchers from Kansas State and North Carolina State Universities.

As college campuses prepare for an expected increase in H1N1 flu this fall, the researchers said students’ actions will speak louder than words.

"Many students say they routinely wash their hands," said Douglas Powell, an associate professor of food safety at Kansas State University. "But even in an outbreak situation, many students simply don’t."

In February 2006, Powell and two colleagues — Ben Chapman, an assistant professor at North Carolina State University, and research assistant Brae Surgeoner — observed hand sanitation behavior during an outbreak. What was thought to have been norovirus sickened nearly 340 students at the University of Guelph in Canada.

Hand sanitation stations and informational posters were stationed at the entrance to a residence hall cafeteria, where the potential for cross-contamination was high. The researchers observed that even during a high-profile outbreak, students followed recommended hand hygiene procedures just 17 percent of the time. In a self-reported survey after the outbreak had subsided, 83 of 100 students surveyed said they always followed proper hand hygiene but estimated that less than half of their peers did the same.

The results appear in the September issue of the Journal of Environmental Health.

Powell said that in addition to providing the basic tools for hand washing – vigorous running water, soap and paper towels — college students, especially those living in residence halls, need a variety of messages and media continually encouraging them to practice good hand hygiene.

"Telling people to wash their hands or posting signs that say, ‘Wash your hands’ isn’t enough," said Ben Chapman, an assistant professor at North Carolina State University. "Public health officials need to be creative with their communication methods and messages."

Most students surveyed perceived at least one barrier to following recommended hand hygiene procedures. More than 90 percent cited the lack of soap, paper towels or hand sanitizer. Additional perceived barriers were the notion that hand washing causes irritation and dryness, along with just being lazy and forgetful about hand washing. Fewer than 7 percent said a lack of knowledge of the recommended hand hygiene procedures was a barrier.

"Providing more facts is not going to get students to wash their hands," Powell said. "Compelling messages using a variety of media – text messages, Facebook and traditional posters with surprising images — may increase hand washing rates and ultimately lead to fewer sick people."

Abstract
Published research on outbreaks of gastrointestinal illness has focused primarily on the results of epidemiological and clinical data collected postoutbreak; little research has been done on actual preventative practices during an outbreak. In this study, the authors observed student compliance with hand hygiene recommendations at the height of a suspected norovirus outbreak in a university residence in Ontario, Canada. Data on observed practices was compared to post-outbreak self-report surveys administered to students to examine their beliefs and perceptions about hand hygiene. Observed compliance with prescribed hand hygiene recommendations occurred 17.4% of the time. Despite knowledge of hand hygiene protocols and low compliance, 83.0% of students indicated that they practiced correct hand hygiene during the outbreak. To proactively prepare for future outbreaks, a current and thorough crisis communications and management strategy, targeted at a university student audience and supplemented with proper hand washing tools, should be enacted by residence administration.

Egypt and Kansas – food brings us together

I’ve been hanging out with the visiting Egyptians since Thurs.

The U.S. Department of Agriculture has this Cochran Fellows program that provides U.S.-based agricultural training opportunities for senior and mid-level specialists and administrators from public and private sectors who are concerned with agricultural trade, agribusiness development, management, policy, and marketing.

After spending over 30 hours to reach Kansas from Egypt, with a variety of travel headaches, the three food scientists and one professor have been taking in the best Manhattan has to offer: dinner at the Little Apple Brewing Company, viewing the animals at the Riley County Fair, shopping, taking in the Kaw Valley Rodeo Saturday night, and my lectures.

Sunday, the Fellows came to our house for some American-style BBQ and hospitality. I showed them how to cook a hamburger with a tip-sensitive digital thermometer, they told me about cooking and hospitality in Egypt.

Baby Sorenne was the star attraction.

And it’s been a huge honor hanging out with the accomplished gentlemen and learning.

 

‘Multiple little failures add up’ and cause outbreaks

This is a food safety story with no dead bodies, no sick people, and a company responding appropriately to questions raised by inspectors.

Mike Hughlett writes in tomorrow’s Chicago Tribune today that,

When food-safety inspectors called on Panera Bread Co.’s Chicago dough plant earlier this year, they found a host of manufacturing deficiencies.

For instance, a worker was spotted welding near a batch of bread dough — a contamination risk — while some dough was observed in dirty containers.

Panera’s records also indicated that in just over a year, the Chicago plant, which makes bread dough for 124 outlets in four states, fielded 10 complaints from consumers who had found foreign objects, mostly metal, in their food, including a washer discovered in a whole-grain bagel. …

The lesson is: Deviations from good manufacturing practices, which are at issue at Panera’s plant, often are at the heart of food-safety fiascoes. Companies either learn from the errors, as Panera said it did, or the risk increases that the next incident will be more serious.

Doug Powell, a food safety expert at Kansas State University, said,

"It’s multiple little failures that add up; these are warning signs.”

Martin Cole, who heads the Illinois Institute of Technology’s National Center for Food Safety and Technology agreed, adding,

such failures are "fairly common, I’m afraid."
 

Improving sampling and risk communication at FSIS

Chuck Dodd is dreamy – as a student, that is.

What teacher wouldn’t be proud when a student does a class assignment, and it eventually gets published in a peer-reviewed journal?

Chuck took my graduate course, Food Safety Risk Analysis, in the early part of 2008. For the final assignment, students are required to take a food safety risk issue of their choosing, and develop a risk analysis report for an audience, like a regulatory agency, integrating risk assessment, management and communication.

Chuck’s report – after editing and thoughtful comments from colleagues – was recently published in Foodborne Pathogens and Disease, entitled, Regulatory management and communication of risks associated with Eschericia coli O157:H7 in ground beef.

The Kansas State University press release that went out this morning says, in part,

What consumers may not be finding out about recalls and the inspection process, however, could make them doubt the effectiveness of what is actually a pretty good system to keep food safe, according to Kansas State University researchers.

Charles Dodd, K-State doctoral student in food science, Wamego, and Doug Powell, K-State associate professor of food safety, published a paper in the journal Foodborne Pathogens and Disease about how one government agency communicates risk about deadly bacteria like E. coli O157 in ground beef.

Publications, Web pages and recalls are all used in this risk communication.

Dodd said that although the Food Safety and Inspection Service generally does a good job of keeping meat safe, it’s easy for consumers to think the opposite, particularly when a recall tells them that the food in the fridge or pantry may be dangerous. In their study, Dodd and Powell looked at what information consumers can take away from the Food Safety and Inspection Service’s Web site, and suggest government agencies can more clearly communicate their role in keeping the food supply safe.

"We as Americans tend to expect more from regulatory agencies than we should, so we set ourselves up for disappointment," Dodd said. "Occasionally, regulatory agencies may create unrealistic expectations by the way they communicate with the public. The message of our paper is to say that the Food Safety and Inspection Service is doing a good job, considering the amount of resources it has. We are trying to open up dialogue about how its role could be communicated more effectively." …

Testing is just one tool that the Food Safety and Inspection Service uses. Its role is to monitor what other stakeholders are doing to keep food safe. "As a regulatory agency, the Food Safety and Inspection Service is monitoring food safety, not necessarily testing it themselves," Dodd said. "I think that’s what a lot of us consumers misinterpret. We need to remember that regulatory agencies allocate, not assume, responsibility."

Abstract

Foodborne illness outbreaks and ground beef recalls associated with Escherichia coli O157:H7 have generated substantial consumer risk awareness. Although this risk has been assessed and managed according to federal regulation, communication strategies may hamper stakeholder perception of regulatory efforts in the face of continued E. coli O157:H7 outbreaks associated with ground beef. To mitigate the risk of E. coli O157:H7 contamination in ground beef, the beef industry employs preharvest and postharvest interventions, while the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) provides regulatory oversight. Policy makers must understand and clearly express that regulation allocates, not assumes, responsibility. The FSIS role may be poorly communicated, leading consumers, retailers, and others in the farm-to-fork food safety system to misrepresent risks and creating unrealistic expectations of regulatory responsibility. To improve this risk communication, revisions may be needed in FSIS-related documents, Web pages, peer-reviewed publications, and recall announcements.

E. coli O157:H7 and cattle diet – it’s messy

“If only” is often how statements begin by food safety wannabes who are sure they have stumbled upon a vast conspiracy meant to subjugate society.

If only Monsanto didn’t genetically-engineer seeds …

If only products like milk were served raw and natural …

If only cattle were fed grass, there would be no E. coli O157:H7.

When someone makes such proclamations, or says they speak fact, usually with an air of authority, I immediately think that person is full of it. People who say “trust me” are immediately untrustworthy.

Megan Jacob, Todd Callaway, and T.G. Nagaraja of Kansas State University write about the dietary interactions and interventions affecting Escherichia coli O157 colonization and shedding in cattle in an upcoming issue of Foodborne Pathogens and Disease. It’s not a movie, not a blog, not a pulp fiction, so they sorta have to get it right. And they do, when they write:

“The specific mechanisms responsible for increased or decreased E. coli O157 shedding or survival are not known … results of studies are conflicting or not repeatable, which speaks to the complexity of the hindgut ecosystem, variation in animal feed utilization, and variation within feed products.”

Escherichia coli O157 is an important foodborne pathogen affecting human health and the beef cattle industry. Contamination of carcasses at slaughter is correlated to the prevalence of E. coli O157 in cattle feces. Many associations have been made between dietary factors and E. coli O157 prevalence in cattle feces. Preharvest interventions, such as diet management, could reduce the fecal prevalence and diminish the impact of this adulterant. Dietary influences, including grain type and processing method, forage quality, and distillers grains have all been associated with E. coli O157 prevalence. In addition, several plant compounds, including phenolic acids and essential oils, have been proposed as in-feed intervention strategies. The specific mechanisms responsible for increased or decreased E. coli O157 shedding or survival are not known but are often attributed to changes in hindgut ecology induced by diet types. Some interventions may have a direct bacterial effect. Frequently, results of studies are conflicting or not repeatable, which speaks to the complexity of the hindgut ecosystem, variation in animal feed utilization, and variation within feed products. Still, understanding specific mechanisms, driven by diet influences, responsible for E. coli O157 shedding will aid in the development and implementation of better and practical preharvest intervention strategies.

Final hockey game – Friday, 7 p.m., our place

Fortunately, Dale’s in Germany so I don’t have to listen to how awesome Pittsburgh is and how he’s followed them since he was a kid.

Me, I was crushed when Pittsburgh beat out Carolina in 4 straight games in the semis.

But I’ve gotten over it to host game 7 of the National Hockey League finals Friday night. Seriously, in Manhattan, KS, and with Dale in Germany, Amy and I are  hockey central.

And Amy once again wants Detroit to win. Zetterberg is her hero.

Bye bye, listservs

This is what I sent out to all the previous subscribers of my various listservs over the years. I’m grateful for all the support I received and still pissed that the University of Guelph just scooped up the leftover money for their paper clip fund. Seriously, I left $140,000 that all you great supporters provided for news, and Guelph just sucked it up. Why anyone would ever give them another dime is beyond me. But I’m just a widget; I get that.

The listserv you have been subscribed to no longer exists. All of the activities of the International Food Safety Network at Kansas State University have been consolidated under bites.ksu.edu.

The 9,000 or so direct subscribers to fsnet-l have been transferred to bites-l. We’re still working on a daily digest version, so will keep the istserv going for now.

Handwashing and sanitation: try to make the message meaningful

While Amy, Sorenne and I observed some sort of cross between The Hills and Real Housewives of Somewhere at a poolside party in Scottsdale, Arizona, some 2,300 Kansas State students were graduating this afternoon.

Hand sanitizers were apparently on the agenda as those who convocated were offered hand sanitizer before receiving their degree. The optional offering was apparently designed to ease flu fears. Seems reasonable enough, but do such offerings actually amplify rather than assuage concerns about swine flu, er, H1N1, or any other communicable disease?

If any of the thousands of family and friends who visited Kansas State today had wandered into the student union to use the washroom, they would have seen the sign pictured below. Megan discovered this about a week ago, and three of us read the sign and thought the disinfectant referred to some special kind of handwashing soap. Maybe we’re just handwashing geeks.

So Megan went on an investigative trek that finally led to AFFLAB Antimicrobial Lotion Soap. The company website does not list factual information about their soaps and the germ killing power it may have. In general, antimicrobial and antibacterial soaps do aid in the “eradication of germs” and washing hands properly helps as well. However, if no such soaps are available, non-antimicrobial or non-antibiotic soaps will also clean your hands. During handwashing, the act of rubbing hands vigorously together with soap, creating lather, then rinsing them, is what removes germs (or, for the science nerds, transient flora).

Then Amy looked over my shoulder and said, “the disinfectant is the stuff used to wash the bathroom floors.”

Oops.

I do not know the purpose of the signs, and what message the signs were intended to convey, but they failed. And as Megan said, “ugly, unattractive signs aren’t going to increase hand hygiene.”

Don’t eat poop cupcakes and more

Things are winding down at Kansas State University for the year – at least on the teaching side. In the past, Amy and I have planned some exotic trip to France or Canada to get out of Kansas for the summer, but this year, we’re staying fairly put, with baby Sorenne. Maybe she’ll get acclimated to the heat.

On Friday, for the second year now, Amy hosted the Modern Languages departmental end-of-semester soiree, where all the language professors get together in a Tower of Babel sorta thing. Good fun, good food. And in a food porn moment, Katie made language-based cupcakes. What’s your favorite?

(Oh, and the A-Goo cupcake was in honor of baby Sorenne, cause she says that a lot.)
