1000 tons of meat seized in South China some ‘soaked in bleach’

Police in China’s southern province of Guangdong have seized $12.3 million of potentially hazardous frozen meat including some reportedly soaked in bleach.

goodfellas-body-meat-freezer-09Sixteen suspects were detained in the raid late last week, say local police, who uncovered 1,000 tons meat and offal — chiefly from the U.S., Brazil and Thailand — on a vessel near Dangan Island by the city of Shenzhen.

“A criminal gang that used to smuggle frozen meat products, along with marine smuggling channel in Guangdong waters, were busted in the crackdown,” said a police statement, reports the state-backed China Daily newspaper.

Police said some of the haul — including beef cuts, tripe, tongue and chicken wings — had been soaked in bleach in order to clean the meat and increase its weight. A kilogram of beef weighs more than 1.5 kg after soaking in highly toxic bleach, said police, warning that the doctored meat would have “seriously harmed people’s health.”

 

Campy in Canada: Pets and raw milk underestimated

To inform source attribution efforts, a comparative exposure assessment was developed to estimate the relative exposure to Campylobacter, the leading bacterial gastrointestinal disease in Canada, for 13 different transmission routes within Ontario, Canada, during the summer.

sadie-dog-powellExposure was quantified with stochastic models at the population level, which incorporated measures of frequency, quantity ingested, prevalence, and concentration, using data from FoodNet Canada surveillance, the peer-reviewed and gray literature, other Ontario data, and data that were specifically collected for this study. Models were run with @Risk software using Monte Carlo simulations.

The mean number of cells of Campylobacter ingested per Ontarian per day during the summer, ranked from highest to lowest is as follows: household pets, chicken, living on a farm, raw milk, visiting a farm, recreational water, beef, drinking water, pork, vegetables, seafood, petting zoos, and fruits.

The study results identify knowledge gaps for some transmission routes, and indicate that some transmission routes for Campylobacter are underestimated in the current literature, such as household pets and raw milk. Many data gaps were identified for future data collection consideration, especially for the concentration of Campylobacter in all transmission routes.

The New Zealand Herald reports that young people are labouring under the false impression roll-your-own cigarettes are healthier than manufactured ones because they are more “natural”, when they could actually be at least as hazardous and more addictive, researchers say.

A study by Smokefree researchers at the University of Otago also found some people would find roll-your-own(RYO) cigarettes less appealing if the rolling papers were a mustard yellow colour.

Otago’s professor of public health, Richard Edwards, published a letter in medical journal BMJ in 2014 saying evidence showed RYO cigarettes “are at least as hazardous as any other type of cigarette” and pointing to animal research suggesting they were more addictive.

“Any notion that loose tobacco is more ‘natural’ is severely undermined by evidence that the concentration of additives is higher in loose tobacco, at about 18 per cent of dry weight, compared with 0.5 per cent for factory made cigarettes,” he wrote in his letter.

“Some of these additives, including sweeteners such as honey, sugar, dextrose, and sorbitol, often at much higher concentrations than in factory-made cigarettes, potentially make the product more acceptable to children. The high concentration of other additives would probably surprise RYO cigarette smokers.”

The researchers at Otago published their findings in the international journal Tobacco Control.

Schaffner does science: ‘Five second rule’ for food on floor is untrue, study finds

(My previous lab had our moment in 2004 when we trashed food safety practices on TV cooking shows; it was peer-reviewed before we talked about it.)

So Schaffner and graduate student Robyn Miranda, waited until their results were published, and then destroyed the 5-second rule: you know, food is safe if it’s on the floor for less than 5-seconds.

Christopher Melesept of the N.Y. Times reports a new study debunks the so-called five-second rule.

Professor Donald W. Schaffner, a food microbiologist at Rutgers University in New Jersey, said a two-year study he led concluded that no matter how fast you pick up food that falls on the floor, you will pick up bacteria with it.

The findings in the report — “Is the five-second rule real?” — appeared online this month in the American Society for Microbiology’s journal,Applied and Environmental Microbiology.

Researchers at Aston University’s School of Life and Health Sciences in England reported in 2014 that food picked up a few seconds after being dropped is “less likely to contain bacteria than if it is left for longer periods of time,” giving rise to news accounts suggesting that eating the food might be harmless. Those findings, and research done at the University of Illinois in 2003, did not appear in a peer-reviewed journal, Professor Schaffner noted.

Even though the five-second rule is a bit of folklore, it still raised important public health issues that demanded closer scrutiny, he said. He cited research by the Centers for Disease Control, which found that surface cross-contamination was the sixth most common contributing factor out of 32 in outbreaks of food-borne illnesses.

5-second-ruleProfessor Schaffner and a master’s thesis student, Robyn C. Miranda, tested four surfaces — stainless steel, ceramic tile, wood and carpet — and four different foods: cut watermelon, bread, buttered bread and strawberry gummy candy. They were dropped from a height of five inches onto surfaces treated with a bacterium with characteristics similar to salmonella.

The researchers tested four contact times — less than one second and five, 30 and 300 seconds. A total of 128 possible combinations of surface, food and seconds were replicated 20 times each, yielding 2,560 measurements.

The research found that the five-second rule has some validity in that longer contact times resulted in transfer of more bacteria. But no fallen food escaped contamination completely. “Bacteria can contaminate instantaneously,” Professor Schaffner said in a news release.

Carpet had a very low rate of transmission of bacteria compared with tile and stainless steel; transfer rates from wood varied.

The composition of the food and the surface on which it falls matter as much if not more than the length of time it remains on the floor, the study found. Watermelon, with its moisture, drew the highest rate of contamination and the gummy candy the least.

In an interview, Professor Schaffner said, “I will tell you on the record that I’ve eaten food off the floor.” He quickly added: “If I were to drop a piece of watermelon on my relatively clean kitchen floor, I’m telling you, man, it’s going in the compost.”

The history of the five-second rule is difficult to trace but it is attributed apocryphally to Genghis Khan, who declared that food could be on the ground for five hours and still be safe to eat, Professor Schaffner said.

William K. Hallman, an experimental psychologist and a professor at the Department of Human Ecology at Rutgers University, said people do not put every decision through a risk-benefit filter and instead rely on cognitive shortcuts called heuristics to help in their daily lives.

“It’s a way of making a very quick decision with whatever data is available,” he said in an interview.

But sometimes those shortcuts can be based on flawed assumptions or missing information.

For instance, germs are invisible and so they are easy to ignore when “something of particular value, like a yellow peanut M&M” falls to the floor, he said. Because germs are out of sight, the belief is there is no harm in picking up the M&M and popping it in your mouth.

People are also impervious to risk. “I’ve done this all my life and never gotten sick; I did this a couple of days ago and nothing happened,” he said in an email.

Or as Professor Schaffner observed: “The first kid, the pacifier falls on the floor, oh my God, we have to sterilize it. By the third kid, it’s like ‘whatever.’ ”

Research has shown that people think germs belong to other people, Professor Hallman said. For instance, people generally believe their bathrooms are cleaner than a public restroom. In fact, that is not the case because public restrooms are cleaned more regularly, he said in an interview.

People also misunderstand the transmission of germs.

“We sort of joke about the five-second rule, but people act as if germs take some period of time to race to the item that fell on the floor,” he said.

People also do not recognize the symptoms of food-borne illnesses and tend to blame them on the last thing they ate, so they do not connect how their earlier actions might have made them sick.

Yes, according to Professor Hallman. In contrast to women, men say they more frequently engage in behaviors such as picking up food or a fork that has fallen to the floor, or picking an insect or a hair out of their food then continuing to eat, he said. The findings came from a phone survey of 1,000 Americans in 2005.

Anthony Hilton, a professor of microbiology at Aston University, said a survey of nearly 500 people found 81 percent of women said they followed the rule — they would not eat anything that lingered on the floor — compared with 64 percent of men, the magazine “Scientific American” reported.

“Hilton says he doesn’t have a good explanation for this gender differentiation but points out that this finding is consistent with other research into the five-second rule,” the magazine wrote. “One possible conclusion: This is tacit confirmation of another piece of folk wisdom — men are less discerning when it comes to their food’s cleanliness.”

The Australian Food Safety Information Council has announced that the campaign for Food Safety Week to be held from 6 to 12 November 2016, was announced today as ‘Raw and risky’ foods.

Council Chair, Rachelle Williams, said we have seen major food poisoning outbreaks in recent years linked to risky raw foods such as unpasteurized milk, raw eggs, bean/seed sprouts, frozen berries and lettuce.

Duh.

Russia, UAE ban Egyptian produce, Saudi lab say frozen berries safe

Rosselkhoznadzor, the state agricultural safety agency, said on Friday that imports of Egyptian plant products will be banned from next Thursday until Egypt’s authorities take steps to ensure their safety.

The Ministry of Climate Change and Environment on Saturday said it had instructed food control authorities in each of the seven emirates “to tighten control procedures on frozen strawberries imported from Egypt in order to avoid the entry of any contaminated products that pose a risk to the consumer in the country”.

Yesterday, a Saudi laboratory following thorough tests has confirmed that Egyptian frozen strawberries in the market are safe for consumption.

The test negates all the rumours circulating on social media platforms regarding Egyptian frozen strawberry products and their link to the Hepatitis A outbreak reported recently across eight US states.

A day earlier, an official report posted on the Food and Drug Administration’s (FDA) website does not conform to what has been circulated on social media platforms regarding Egyptian frozen strawberries.

The ministry urged the public to refrain from posting or circulating any news on social media platforms without contacting the concerned authorities to verify and validate the credibility of that information before posting.

Avoid pigeon poop, possible source of bad E. coli

Verotoxigenic Escherichia coli infections in humans cause disease ranging from uncomplicated intestinal illnesses to bloody diarrhea and systemic sequelae, such as hemolytic uremic syndrome (HUS).

We used whole-genome sequencing to characterize a set of VT2f-producing E. coli strains from human patients with diarrhea or HUS and from healthy pigeons. We describe a phage conveying the vtx2f genes and provide evidence that the strains causing milder diarrheal disease may be transmitted to humans from pigeons.

The strains causing HUS could derive from VT2f phage acquisition by E. coli strains with a virulence genes asset resembling that of typical HUS-associated verotoxigenic E. coli.

Whole genome sequencing to determine food sources of Salmonella

Salmonella Typhimurium (STM) is an important cause of foodborne outbreaks worldwide. Subtyping of STM remains critical to outbreak investigation, yet current techniques (e.g. multilocus variable number tandem repeat analysis, MLVA) may provide insufficient discrimination. Whole genome sequencing (WGS) offers potentially greater discriminatory power to support infectious disease surveillance.

We performed WGS on 62 STM isolates of a single, endemic MLVA type associated with two epidemiologically independent, foodborne outbreaks along with sporadic cases in New South Wales, Australia, during 2014. Genomes of case and environmental isolates were sequenced using HiSeq (Illumina) and the genetic distance between them was assessed by single nucleotide polymorphism (SNP) analysis. SNP analysis was compared to the epidemiological context.

Results

The WGS analysis supported epidemiological evidence and genomes of within-outbreak isolates were nearly identical. Sporadic cases differed from outbreak cases by a small number of SNPs, although their close relationship to outbreak cases may represent an unidentified common food source that may warrant further public health follow up. Previously unrecognised mini-clusters were detected.

Conclusions

WGS of STM can discriminate foodborne community outbreaks within a single endemic MLVA clone. Our findings support the translation of WGS into public health laboratory surveillance of salmonellosis.

6 confirmed sick: Crypto linked to raw milk in New Mexico

Officials with the New Mexico Department of Health are investigating cases of cryptosporidiosis among state residents.

napoleon-raw-milkThey say there have been six confirmed cases of “crypto” — a diarrheal disease caused by microscopic parasites — since Aug. 31.

Each reported consuming raw milk products.

The affected individuals are from Bernalillo County.

Epidemiologists, laboratory staff and inspectors are working to confirm the source of the outbreak.

The state Department of Agriculture and New Mexico Environmental Department also are involved in the investigation.

Health Department officials recommend that anyone in New Mexico who has raw milk products discard the product to prevent infection.
