Chipotle: Food safety idiots

Rather than focus on the things that make people barf – which Chipotle should know all about – they are now claiming it is the only national restaurant brand without added colors, flavors or preservatives on its entire menu.

l“We have always used high quality ingredients and prepared them using classic cooking techniques,” Steve Ells, Chipotle’s founder and CEO, said in a statement.

“We never resorted to using added colors or flavors like many other fast food companies do simply because these industrial additives often interfere with the taste of the food. However, commercially available tortillas, whether they are for us or someone else, use dough conditioners and preservatives.”

Chipotle now says it uses only local and organically grown produce as well as meats from animals raised without hormones or non-therapeutic antibiotics. None of the 51 ingredients in the restaurant’s foods have been genetically modified but the company still sells soft drinks that contain GMO-containing ingredients.

The company has even released a visual ingredient statement – allowing customers to see exactly what’s being used to create their Chipotle dishes. 

Good luck with that.

Like many other food safety types, I will continue to avoid. Chipotle’s emphasis on marketing bullshit – 21st century snake-oil — rather than safety shows how much they have jumped the shark.

If Chipotle thinks corn, or any of their other ingredients, isn’t genetically modified, then they’re drinking their own jello.

Sure, there are American versions, but not like these.


Bret Stetka of Scientific American writes that compared with other mammals, and along with those of a few other notably bright creatures—dolphins, whales and elephants among them—the brain to body-size ratios of monkeys, apes and humans are among the highest.

For decades the prevailing evolutionary explanation for this was increasing social complexity. The so-called “social brain hypothesis” holds that the pressures and nuances of interacting and functioning within a group gradually boosted brain size.

Yet new research suggests otherwise. A study conducted by a team of New York University anthropologists, and published Monday in Nature Ecology & Evolution, reports diet was in all likelihood much more instrumental in driving primate brain evolution. In particular, it appears that we and our primate cousins may owe our big brains to eating fruit.

I love my fruit.

In Guelph, I was the hockey coach who always ate a grapefruit during the game. I still do when I coach in Australia, but more towards the sweeter fruits.

That must be why I’m so smart (not).

Much of the research exploring the social hypothesis has rendered inconsistent results. And as many in the field have noted, a number of oft-cited studies in support of the theory suffer from small sample sizes and flawed design, including out-of-date species classification. The new work is based on a primate sample more than three times larger than that used in prior studies, and one that used a more accurate evolutionary family tree.

In over 140 primate species, the study authors compared brain size with the consumption of fruit, leaves and meat. They also compared it with group size, social organization and mating systems. By looking at factors such as whether or not a particular primate group prefers solitary to pair living or whether they are monogamous, the researchers figured they should theoretically be able to determine if social factors contributed to the evolution of larger brains.

And it appears they could not. Dietary preferences—especially fruit consumption—seems to have been much more influential. The researchers found that fruit-eating species, or frugivores, have significantly larger brains than both omnivores and “foliovores,” those that prefer eating leaves. “These findings call into question the current emphasis on the social brain hypothesis, which suggests larger brains are associated with increased social complexity,” explains Alex DeCasien, a doctoral candidate in anthropology and lead author of the study. “Instead, our results resurrect older ideas about the evolutionary relationship between foraging complexity and brain size.”

 

11 kids sickened: Campy from a dairy farm visit in Sweden

In April–May 2014, an outbreak of campylobacteriosis occurred after a preschool visit to a dairy farm in the South Western part of Sweden. During the visit, a meal, including unpasteurized milk, was served.

A retrospective cohort study using a web-based questionnaire was performed among the participants (n = 30) of the farm visit. A total of 24 of the 30 (80%) cohort members completed the questionnaire. Eleven cases were identified, and Campylobacter jejuni was isolated from eight of them. Seven of the cases were 2- to 7-year-old children. We found the highest attack rates among those who usually drink milk (45%) and those who consumed unpasteurized milk during the farm visit (42%). No cases were unexposed (risk ratio incalculable).

As result of the farm investigation, Campylobacter was isolated from cattle on the farm. Genotyping with pulsed-field gel electrophoresis and whole genome sequencing confirmed that human and cattle isolates of C. jejuni belonged to one cluster.

Thus, cattle on the farm are considered the source of infection, and the most likely vehicle of transmission was contaminated unpasteurized milk. We recommend consumption of heat-treated milk only and increased awareness of the risk of consuming unpasteurized milk.

Educational events encouraging human–animal interaction include the risk of zoonotic disease transmission. It is estimated that 14% of all disease in the US caused by Campylobacter spp., Cryptosporidium spp., Shiga toxin-producing Escherichia coli (STEC) O157, non-O157 STECs, Listeria monocytogenes, nontyphoidal Salmonella enterica and Yersinia enterocolitica were attributable to animal contact. This article reviews best practices for organizing events where human–animal interactions are encouraged, with the objective of lowering the risk of zoonotic disease transmission.

 

 

From the E. coli O121 in low-moisture foods file: flour power edition

It’s all so confusing. There’s a cluster of E. coli O121 in Canada. Sort of a big one. 24 people ill in four provinces (British Columbia, Saskatchewan, Alberta and Newfoundland and Labrador) going back to November 2016.

These illness came on the tail end of another E. coli O121 outbreak in the U.S. linked to Gold Medal brand all purpose flour.

Today, CFIA (that’s the Canadian Food Inspection Agency for those following along at home) announces a recall of Robin Hood brand all purpose flour distributed in four provinces (Alberta, British Columbia, Manitoba, Saskatchewan) due to E. coli O121 contamination – linked to one illness.

In the new world of whole genome sequencing it would seem easy to say whether these clusters are linked – or totally different. And is the single illness CFIA reports part of the E. coli O121 cluster? Is it different?

My head hurts.

Earlier this year Natalie Seymour and I organized a workshop on STEC in flour. Karen Neil of CDC, Tim Jackson from Nestle and Scott Hood from General Mills spoke about challenges in flour food safety. The workshop focused on stuff like, there’s no kill step in the milling process, there’s literally tons of commingling and although it’s not intended to be eaten raw – sometimes it is (in cookie dough, cake mix).

And a risk factor in the 2016 Gold Medal-linked outbreak was kids handling raw tortilla and pizza dough in restaurants.

There’s some other stuff known about flour – generic E. coli species have been found in flour in NZ.

A survey conducted on wheat and flour milling in Australia showed no detectable Salmonella, 3.0 MPN/g of generic E. coli and 0.3 MPN/g of B. cereus recovered on average from 650 samples (from two mills).

And a US study found generic E. coli in 12.8% of commercial wheat flour samples examined.

So, yeah, flour.

Raw is risky: Drake cancels show in Amsterdam after sushi makes him barf

For Canadians, the musician Drake will always be known as Jimmy Brooks from the teen dram series Degrassi: The Next Generation.

For Americans, he’s known as Drake, with 21 tracks on the streaming songs chart (all from ‘More Life’), beating his own record for the most concurrently charting tracks. He’s also No. 1 on Billboard.

For the Dutch, Drake is known as the barfing performer who couldn’t do a show.

TMZ reports Drake ate some bad sushi on Monday, and it messed up his stomach. We’re told it was so bad he had to get medical treatment immediately. It wasn’t enough though … he was still too sick to go onstage, which seriously pissed off the entire arena full of fans who’d already been waiting in their seats for 75 minutes when they got the bad news.

It was the third time in 3 months Drake had to postpone an Amsterdam gig … which explains why fans threw crap onstage. He’s promised to make up the show Wednesday.

Sometimes celebrities — and mere mortals — use foodborne illness as an excuse to mask their excesses the night before. Just sayin’.

Duncan Hines: Cake mix king and road warrior who shaped restaurant history

This is an outstanding story by Nicole Jankowski, a freelance food, history and culture writer based in Detroit, who writes Duncan Hines, traveling salesman and future purveyor of boxed cake mix, considered himself an authority on a great many things: hot coffee, Kentucky country-cured ham and how to locate a tasty restaurant meal, in 1935, for under a dollar and a quarter.

In 1957, Duncan Hines and his wife, Clara, cut a cake at the Duncan Hines test kitchen in Ithaca, N.Y.

By the 1950s, Hines’ name would be plastered on boxes of cake mix; housewives would turn to his products for consistent quality and superior taste. Newspaper photographs featured Hines clad in a white chef’s apron, hoisting a neatly frosted cake or thoughtfully dipping a spoon into a mixing bowl.

But Duncan Hines wasn’t a chef — in truth, he could barely cook. For most of his career, he had just been a businessman, desperate for a decent meal on the road. Through his search for the best restaurants across America, he became an accidental gourmand, an unlikely author and homegrown connoisseur.

Although boxed cake mix is the legacy that most people now associate with Duncan Hines (only after asking, “Was he actually a real person?”) the supermarket foods that bear his name are only an epilogue to a storied life traveling America’s back roads.

It was really his book, Adventures in Good Eating, that first put Duncan Hines on the map. And it was his tireless pursuit of good food that inspired his book.

Hines’ appreciation for a good meal arose out of mere necessity. From the 1920s through the ’40s, he motored across the country hawking letter openers and paperclips and subsisting on unreliable road food. It was an era long before any formal restaurant rating system existed in the U.S. The names and locations of good restaurants were conveyed by word of mouth; for an out-of-town traveler, locating a decent supper was often a daunting and discouraging mission. And although Europe had relied on The Michelin Guide since 1900, middle America in the 1920s and ’30s was still a land of culinary mystery and inconsistency.

Desperate for a clean place to dine, Hines became an investigative epicurean and self-made restaurant critic. He carried a tiny journal in his coat pocket, jotting down the precise locations of his favorite places. No restaurant was off limits for the inquisitive Hines. “The kitchen is the first spot I inspect in an eating place,” he wrote. “More people will die from hit or miss eating than from hit and run driving,” he joked — though Hines clearly thought food safety was no laughing matter.

He frequently popped into the kitchen to scrutinize how staff handled food and then swung around back to investigate the restaurant’s garbage pile. He meticulously recorded the names of the most pristine diners, the inns with the tastiest prime roast beef, and where to find the stickiest honey buns. He appreciated regional cuisine, quickly discovering in which part of the country to brake for broiled lobster tail (New England) and where to stop for fried chicken (Kentucky).

Hines noted whether a restaurant had air conditioning, its hours of operation and its prices for breakfast, lunch and dinner. “His restaurant notes were extraordinarily accurate,” says Louis Hatchett, author of the book, Duncan Hines: How a Traveling Salesman Became the Most Trusted Name in Food. “As word spread among his family and friends, people were begging him to share the list he had created. There was nothing out there like it,” he says. “In 1935, sick of being pestered, he finally sent out a little blue pamphlet in his Christmas cards, containing a list of 167 restaurants across 33 states that he could safely recommend.”

Soon, Hines was receiving postcards from from salesmen, newlyweds and other travelers all over America seeking his recommendations for good, clean restaurants.

In 1936, at 55, Hines self-published his first edition of Adventures in Good Eatingand sold them for $1 each. It contained the names and locations of 475 restaurants from coast to coast that had Hines’ rigorous seal of approval. “The books were sold through word of mouth, but they quickly sold out. The following year he raised the guide’s price to $1.50 — and that’s where the price would stay for the next 25 years,” explains Hatchett.

“Recommended by Duncan Hines” became the gold standard in dining by the 1950s.

Two years before his death in March of 1959, the entire franchise was sold to Procter & Gamble.

Hines often said, “Nearly everyone wants at least one outstanding meal a day.” This seems as true now as it did a half-century ago. But long before Yelp or TripAdvisor offered restaurant reviews with the click of a button, Hines was doing it his own way, by traveling the highway with his pencil and notebook, changing the way America ate on the open road — one adventure at a time.

Cookbooks Give Readers (Mostly) Bad Advice On Food Safety

Cookbooks could be a much better source of food safety information than they are. So could online recipes (like those from Epicurious, Allrecipes.com and foodnetwork.com.

Katrina reminded me today that those are next.

A recent study finds that bestselling cookbooks offer readers little useful advice about reducing food-safety risks, and that much of the advice they do provide is inaccurate and not based on sound science.

“Cookbooks aren’t widely viewed as a primary source of food-safety information, but cookbook sales are strong and they’re intended to be instructional,” says Ben Chapman, senior author of a paper on the work and an associate professor of agricultural and human sciences at North Carolina State University.

“Cookbooks tell people how to cook, so we wanted to see if cookbooks were providing any food-safety information related to cooking meat, poultry, seafood or eggs, and whether they were telling people to cook in a way that could affect the risk of contracting foodborne illness,” Chapman says.

To that end, the researchers evaluated a total 1,497 recipes from 29 cookbooks that appeared on the New York Times best sellers list for food and diet books. All of the recipes included handling raw animal ingredients: meat, poultry, seafood or eggs.

Specifically, the researchers looked at three things:

Does the recipe tell readers to cook the dish to a specific internal temperature?
If it does include a temperature, is that temperature one that has been shown to be “safe”? For example, cooking chicken to 165°F.

Does the recipe perpetuate food-safety myths – such as saying to cook poultry until the juices “run clear” – that have been proven unreliable as ways of determining if the dish has reached a safe temperature?

The researchers found that only 123 recipes – 8 percent of those reviewed – mentioned cooking the dish to a specific temperature. And not all of the temperatures listed were high enough to reduce the risk of foodborne illness.

“In other words, very few recipes provided relevant food-safety information, and 34 of those 123 recipes gave readers information that wasn’t safe,” Chapman says. “Put another way, only 89 out of 1,497 recipes gave readers reliable information that they could use to reduce their risk of foodborne illness.”

In addition, 99.7 percent of recipes gave readers “subjective indicators” to determine when a dish was done cooking. And none of those indicators were reliable ways to tell if a dish was cooked to a safe temperature.

“The most common indicator was cooking time, which appeared in 44 percent of the recipes,” says Katrina Levine, lead author of the paper and an extension associate in NC State’s Department of Agricultural and Human Sciences. “And cooking time is particularly unreliable, because so many factors can affect how long it takes to cook something: the size of the dish being cooked, how cold it was before going into the oven, differences in cooking equipment, and so on.”

Other common indicators used in the cookbooks included references to the color or texture of the meat, as well as vague language such as “cook until done.”

“This is important because cooking meat, poultry, seafood and eggs to a safe internal temperature kills off pathogens that cause foodborne illness,” Levine says. “These temperatures were established based on extensive research, targeting the most likely pathogens found in each food.”

“Ideally, cookbooks can help us make food tasty and reduce our risk of getting sick, so we’d like to see recipes include good endpoint cooking temperatures,” Chapman says. “A similar study was done 25 years ago and found similar results – so nothing has changed in the past quarter century. But by talking about these new results, we’re hoping to encourage that change.”

The paper, “Evaluating food safety risk messages in popular cookbooks,” is published in British Food Journal. The paper was coauthored by Ashley Chaifetz, a former Ph.D. student in Chapman’s group at NC State who now works for the U.S. Department of Agriculture’s Food and Nutrition Service. “Evaluating food safety risk messages in popular cookbooks”

Abstract:

Purpose: Medeiros et al. (2001) estimate 3.5 million cases of foodborne illness in the U.S. annually are associated with inadequate cooking of animal foods or cross-contamination from these foods. Past research shows home food handling practices can be risk factors for foodborne illness. The purpose of this study was to evaluate the communication of food safety guidance, specifically safe endpoint temperatures and cross-contamination risk reduction practices, in popular cookbook recipes.

Design/methodology/approach: Recipes containing raw animal ingredients in 29 popular cookbooks were evaluated through content analysis for messages related to safe endpoint temperature recommendations and reducing cross-contamination risks.

Findings: Of 1,749 recipes meeting study criteria of cooking raw animal ingredients, 1,497 contained a raw animal that could effectively be measured with a digital thermometer. Only 123 (8.2%) of these recipes included an endpoint temperature, of which 89 (72.3%) gave a correct temperature. Neutral and positive food safety behavior messages were provided in just 7.2% (n=126) and 5.1% (n=90) of recipes, respectively. When endpoint temperatures were not included, authors often provided subjective and risky recommendations.

Research limitations/implications: Further research is needed on the effect of these results on consumer behavior and to develop interventions for writing recipes with better food safety guidance.

Practical implications: Including correct food safety guidance in cookbooks may increase the potential of reducing the risk of foodborne illness.

Originality/value: Popular cookbooks are an underutilized avenue for communicating safe food handling practices and currently cookbook authors are risk amplifiers.

94 sickened: Sprouted chia seed powder – USA and Canada, 2013–2014

Salmonella is a leading cause of bacterial foodborne illness. We report the collaborative investigative efforts of US and Canadian public health officials during the 2013–2014 international outbreak of multiple Salmonella serotype infections linked to sprouted chia seed powder.

The investigation included open-ended interviews of ill persons, traceback, product testing, facility inspections, and trace forward.

Ninety-four persons infected with outbreak strains from 16 states and four provinces were identified; 21% were hospitalized and none died. Fifty-four (96%) of 56 persons who consumed chia seed powder, reported 13 different brands that traced back to a single Canadian firm, distributed by four US and eight Canadian companies.

Laboratory testing yielded outbreak strains from leftover and intact product. Contaminated product was recalled. Although chia seed powder is a novel outbreak vehicle, sprouted seeds are recognized as an important cause of foodborne illness; firms should follow available guidance to reduce the risk of bacterial contamination during sprouting.
