A friend of mine who works in the retail food safety world called me up a couple of weeks ago to chat about an incident at a grocery store in Toronto. The high-end store known for its expensive cheeses and cuts of meat was closed by the health department following some complaints of an insect infestation. Health inspectors showed up again three days later and the store reopened.
Pests are a tough thing to control and one of the keys to good management is having staff looking for insects and rodents before they become a problem. My friend wanted an infosheet to share with the front-line staff to show the consequences of not being on the lookout for nasty pests.
