Henry County health officials didn’t find too many things that Huge Hibachi Sushi Buffet, 5425 N. Henry Blvd., did right during the recent routine inspection.
The restaurant does not have a certified food safety manager on staff, and the person in charge lacks safe food handling knowledge, the inspector said.
One food-prep employee was talking on a cell phone while cooking. He also picked his nose and continued cooking without washing his hands, according to the inspection report.
There were skinned frog legs in the freezer, but no one knew who the supplier was and there were no receipts to verify if the source was safe.
Other food items in the freezer were uncovered and had severe freezer burn. And in several coolers, raw meats were stored among washed produce and cooked foods.
Not all hot or cold items at the food bar were at safe temperatures, and there was no time documentation showing how long the food had been left out. Frog legs, spring rolls, roast beef, chicken on a stick, pork, sliced cantaloupe, fried bananas and rice were all thrown away. Other items were reheated.
In other violations, dishes were being washed in the sink without sanitizing solution. There was no consumer advisory or shell stock tags for the raw oysters being served at the bar.
Also, broken equipment and broker coolers were cluttered outside of the facility and need to be removed, the inspector said.
