Sécurité des aliments des plats

Les plats de fêtes Holiday ont été liés à des intoxications alimentaires avec de nombreux pathogènes comprenant Salmonella, Campylobacter, Clostridium perfringens et Staphylococcus aureus. La cuisson pour une grande partie des personnes, que ce soit à la maison ou dans une cuisine collective, peut conduire à des erreurs au détriment de la sécurité des aliments.

Dr. Ben Chapman is an associate professor and food safety extension specialist at North Carolina State University. As a teenager, a Saturday afternoon viewing of the classic cable movie, Outbreak, sparked his interest in pathogens and public health. With the goal of less foodborne illness, his group designs, implements, and evaluates food safety strategies, messages, and media from farm-to-fork.
